There are certain moments in your life in which you experience a euphoria-like feeling. I imagine it's the day you marry your soulmate, the day you land your dream job, or the day you bite into the cakiest rainbow cookie and immediately forget what your name is.

I know for fact it's 1/3 of those things, and quite frankly, I believe biting into a cakey cookie is much like the feeling you experience when looking into the face of your firstborn child.

Maye not, but probably.

I like to think of baking as therapy. You're able to beat the living shit out of a ball of dough, using your best Hulk Hogan strength, until it's just perfectly formed and ready to be cut up into little pillows of love, which is exactly what these cookies are.

Little fluffy pillows of vanilla-y, spinkle-y, cake-y love.

And the best part? This recipe is incredibly versatile. Think of it as a solid base for ultimate cookie possibilities. Use chocolate sprinkles, use sugar sprinkles, use itty bitty gumdrops if that's what makes your skirt fly up! You can truly customize these to any which way that you please and that's what makes em' so great.

I made these over the weekend and 95% of them are already gone. You're not quite sure if you're eating a cookie or a cupcake or sitting on a beach in Hawaii sipping a Mai Tai. They will make a perfect addition to any occasion or the perfect addition to your Monday night on the couch watching Real Housewives.

So, without further adieu, this, my friends, is how you make cakey, fluffy, massive sprinkle cookies that will make everyone in life love your guts to a very annoying level.


 :: cakey sprinkle cookies ::


  • you'll need:

  • 2 + 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup + 3 tbsp granulated sugar
  • 1 large egg
  • 2-3 tsp vanilla extract (I tend to go a little overboard with this)
** note: the sugar amount really matters with these cookies, so don't f*ck it up!


  • how to:

  • - preheat oven to 350. 
  • - combine the flour, baking soda, baking powder and salt in a bowl.
  • - set aside.
  • - cream the butter and sugars together in a large mixing bowl using a hand/stand mixer on medium speed until fluffy -- this shouldn't take long.
  • - add the egg and mix until fully combined.
  • - drop in your vanilla extract and mix some more.
  • - now add in the dry ingredients that we set aside earlier, and mix until the dough starts to form. do not overmix! you'll know if you overmix. the dough should be thick but still a little.. not thick. know what I mean? 
  • - use a rubber spatula to bring it all together and create a more smooth look.
  • - using an ice cream scooper, spoon out some dough and place on a slightly greased baking sheet or one that's been covered in parchment paper. bonus points if you have a silicone baking mat!
  • - bake for 7-8 minutes and allow to cool for an additional 5 minutes before attempting to move them. they will appear soft in the center but they are cooked, so don't overdo it.
