It's Superbowl weekend, baby! Let's get a little naughty in the kitchen with these spicy, saucy, buffalo chicken meatballs!


I'd be lying to you if I pretended like I was at all interested in football this year. Between COVID hitting, life changes, and Tom Brady no longer being a Patriot, I just couldn't get excited or care enough to sit down and watch an entire game. 

Even though he forced me to become a Buccaneers fan, can we just talk about Tom Brady for a minute? Does this man even age? What is in this life elixir that I'm positive he's drinking every morning? What kind of skincare does he use? 43 and still killing it? I need to know everything.


Even though I couldn't care-less about the game this year, we all know that in most cases, Superbowl is less about the football, and more about the food. And that is one thing that I can totally get involved in.

These spicy babes will make for the perfect game day appetizer as well as an excellent midnight snack straight from the fridge. Highly doubt there will be any left, but I believe in you.

Let's play with some balls, shall we?


buffalo chicken meatballs

*makes about 35 balls

you'll need:

- 1lb ground chicken
- 1 cup panko breadcrumbs
- 1 egg
- 1 packet of ranch dressing mix (gamechanger)
- 2 cloves of garlic
- 5-6 green onions (or scallions) finely chopped
- 1 cup buffalo sauce
- salt + pepper to taste
- ranch or blue cheese for dipping

how to:

Preheat oven to 400 and then line a baking sheet with parchment paper. 

In a large bowl, combined ground chicken, panko, egg, ranch dressing mix, garlic, green onions, 1 tablespoon of buffalo sauce + salt and pepper to taste. I find using your hands to mix it all up is the best possible method, however, a little elbow grease and a rubber spatula could work if your skeevish towards handling raw meat.

Roll mixture into 1 tablespoon-sized balls (an ice cream scooper works great!) and place on the prepared baking sheet. 

Cook the meatballs in the oven for 15 minutes, then remove and cool for 5. Pour remaining buffalo sauce in a bowl and add in the meatballs. Carefully toss to coat, then add the meatballs back onto the baking sheet and cook for an additional 10 minutes.

Drizzle on a little extra sauce + top with green onions and enjoy!
